Biko Recipe (Filipino Rice Cake)

My husband would always crave to eat a sweet snack or simple dessert after dinner time so I serve him this Biko recipe, a Filipino version of a sweet rice cake.  This Biko Recipe combines the perfect blend of sweetness from the sticky glutinous rice and creamy coconut milk topping.

How To Make Biko Recipe - A Filipino Rice Cake

Make this very easy Filipino rice cake recipe, also known as Biko or kakanin in Tagalog.  This Biko is made out of glutinous rice that is cooked or steamed with coconut milk then baked with sweet caramel topping.  

Ingredients for Biko Recipe:

Here are the simple ingredients that you will need to prepare for making this Biko Recipe:
  • 4 cups coconut milk or gata ng niyog
  • 1 can condensed milk (for topping)
  • 4 cups glutinous rice, washed 3 times then drained
  • 1½ cup brown sugar
  • 1 cup water
  • 1 tbsp melted butter

Procedures on How To Make Biko or Kakanin Recipe:

Here are the simple step by step procedures on How To Make this Biko Recipe:
1.  Put the rice inside the rice cooker.
2.  Then add the coconut milk,
3.  Add the water.
4.  Mix well.
5.  Cook the rice.
6.  After the rice mixture boils and gets thick, add the brown sugar.
7.  Mix well.
8.  Continue to cook.
9.  Grease the baking pan with butter.
10.  Rice is ready if it is soft and sticky and the mixture is thick.
11.  Transfer the cooked rice into the baking pan.

12.  Spread the rice mixture evenly.
13.  Preheat the oven at 350°F.
14.  Place the rice mixture inside the oven then bake for 20 minutes.
15.  Remove the rice mixture from the oven after 20 minutes.
16.  Add the condensed milk for topping.

17.  Spread the condensed milk evenly using a spatula.
18.  Return in the Biko mixture inside the oven then bake for 40 minutes.
19.  After 40 minutes, switch oven to broil on high.
20.  Broil for 3 minutes or until the caramel topping turns brown.
21.  Remove biko mixture from the oven.
22.  Allow biko to cool off before cutting into serving size pieces.

This kakanin recipe is a wonderful treat that you can serve as a snack, merienda, or dessert especially during Fiestas, birthday celebrations, other Holidays such as All Saint's Day, and special Holidays like Christmas Eve and New Year's Day.
