How to Make Cassava Cake (Filipino Dessert Recipe)

In the Philippines, my Ilocano grandparents own a small farm lot where they plant a lot of cassava root crop or kamoteng kahoy, along with corn, sugar cane, camote, and other simple vegetable plants that are indigenous to the Filipino people such as the saluyot, parya, sitaw, and upo.

Once the cassava root crop is harvested, it is washed thoroughly with clean running water to remove dirt and mud.  Then the brown skin or outer layer of the cassava is removed to reveal the white edible part of the root crop that is then grated in making a simple cassava cake.

You can find this cassava root crop being sold commonly in most markets in the Philippines nationwide.  If you are an Overseas Filipino Worker (OFW) or if you are living abroad, you can also find preserved and grated cassava in the frozen section of most Asian grocery stores.
